When we started talking about his upcoming birthday, Ozzy told me he wanted a cake with raspberries and cars and trucks.

Ok, little man!  Your wish is my command!

I’m not sure you would even consider this a recipe, but this is how I did it…

I tried putting the filling in before baking.  It was yummy, but sunk to the bottom.

First, I tried putting the filling in before baking. It was yummy, but sunk to the bottom.  Luckily, he had a family party and a friend party this year, so I got to try another way that worked much better (described below).

Both versions looked the same on the outside.

I was really excited about how they turned out.  How cute are they?!

And most importantly, the Birthday Boy liked them, too!

We even took a left over cupcake to Great Grandpa when we went to visit him and play a game!

Ingredients:

  • your favorite box cupcake mix
  • your favorite cake frosting – I like Pillsbury Easy Frost.
  • a can of raspberry pie filling
  • fresh raspberries
  • one plastic baggie
  • cupcake liners
  • car and truck cake decorations
  • birthday candles

Instructions:

  1. Prepare and bake the cupcakes according to the instructions on the box – I always check them a little early.  In my experience, a toothpick usually comes out clean before the time is up!
  2. Let them cool, then poke a hole in the top of each one with the handle of a spoon.
  3. Put the pie filling into a plastic baggie and cut off the tip to make a make-shift pastry bag.
  4. Fill each hole with the pie filling.
  5. Top each with frosting, then with a raspberry.
  6. Add cake decorations and candles!
