We go to a friend’s Halloween party every year and every year I fail at making a Halloween dessert.  I’ve made brownies with spider webs out of marshmallow that turned into super hard, almost inedible grossness.  I’ve made mummy cupcakes, but frosted them before they were totally cool and they turned into a melty mess.  And I’ve made these…

This year, I decided to try an appetizer.  Apparently, it’s much more my thing.  I’ll keep this in mind for the future!

I found it helpful to use a bowl to help make the pumpkin shape.

After it sets in the fridge, roll it around in some crushed Nacho Cheese Doritos for that pumpkin orange color!

Give your kid cook the left over Dorito crumbs and a spoon. Yum!

Ingredients:

  • 16 oz cream cheese, softened
  • 1 ½ c shredded cheddar cheese
  • 4 T minced onion
  • 3 T salsa
  • 3 t ground cumin
  • 2 t pickled jalapeno, minced
  • a pinch each of salt and pepper
  • 2 c Nacho Cheese Doritos
  • 1 bell pepper stem (orange is best, but you could use any color.)

**Don’t forget something to serve it with.  Dark blue tortilla chips are great for Halloween!

Instructions:

  1. Combine all ingredients except Doritos and bell pepper stem using a hand mixer.
  2. Line a fairly small bowl with plastic wrap.  (You want the bowl to be just about the size of your cheese ball.)
  3. Spoon the cheese mixture into the bowl, wrap it up, and refrigerate for 2+ hours.
  4. Place the Doritos in a baggie and smash them into small pieces.  Then, dump them out onto a large plate.
  5. Unwrap the cheese ball and roll it around in the Doritos, pressing gently to adhere.
  6. Take a small spoonful of the cheese ball off the top and eat it.  You want to make sure it’s ok, of course!
  7. Place the stem in the dent left by your spoon.

Here are some ideas to get your “kid cook” involved with this recipe:

  • Have him help add ingredients to the bowl.  Use a ½ t measuring spoon for the cumin and have him help you count to 6 for a total of 3 t cumin.
  • He can smash the Doritos in the baggie – this is sure to be a favorite!
