There’s more than one way to mash a banana.

…or more than one way to use one anyway.

Here are a couple modified versions of breakfast recipes I’ve already posted.  They both just happen to use mashed bananas.

Here are Breakfast “Cookies” aka Baked Oatmeal Bites with mini chocolate chips instead of cinnamon and raisin.  I made them look more “cookie” and less “bite” this time by flattening them out before baking.

And here is Raisin Walnut Banana Bread minus the raisin and walnut, plus raspberries and pecans.  The raspberries were Ozzy’s idea and were folded into the batter before pouring it into the loaf pan.  I asked him if we should add pecans or almonds.  He said pecans, which were placed on top before baking. I can’t get over how toasted and delicious the pecans (or walnuts or almonds) get!
