I know it’s the middle of October and this is the second summery recipe I’ve posted lately.  However, we had over half a cucumber left that we might not have eaten otherwise.  I’m sure we will eat it now though!

My husband taught me this recipe before we were married.  I’m pretty sure it was something his mom made growing up.

Here’s how you do it…

Cut a cucumber into very thin slices.

Put the lid on the container and shake it a bit to coat. I sort of make a stirring motion while holding it.  Then, turn it upside down and do the same.

Ingredients:

  • 1 seedless cucumber
  • 1 small onion
  • ½ – 1 c sour cream
  • salt
  • ½ t Beau Monde Seasoning

Instructions:

  1. Peel the cucumber and slice it very thin.
  2. Layer the slices in a sealable container, salting each layer before adding the next.
  3. Slice the onion very thin and add it to the cucumbers, separating the slices as you do.
  4. Add sour cream and Beau Monde seasoning on top.
  5. Close the container and shake it a bit to coat.
  6. Refrigerate until ready to serve.  It gets better and better as the flavors meld!

Here are some ideas to get your “kid cook” involved with this recipe:

  • Have him arrange the cucumber slices in the sealable container and sprinkle salt on each layer.
  • He can practice counting the cucumber slices as he lays them in the container.
  • Have him add the Beau Monde seasoning to the container and shake it once sealed.

  2. I’ve never heard of Beau Monde before. Regardless, I love a good cuke salad. Hopefully Mr. Monde is in my grocery store!
