Did you know you can peel, slice, and freeze bananas and they’ll stay good for a very long time?  I was pretty amazed when I learned this.

Even more impressive, when blended, frozen bananas turn into something very similar to ice cream!!! Now, when I choose ice cream, 99% of the time it has chocolate or peanut butter or both.  So, I’ve tried this “Banana Swirl” with different amounts of cocoa powder and peanut butter.  They were good, but this way, this way right here is my favorite when it comes to banana swirl!

We ate it as an afternoon snack today, but it could definitely pass for dessert!

So here’s how it’s done…

All you do is slice a couple bananas.

Put them in the freezer where they will be ready when the hankerin' for ice cream hits.

Let them thaw a little bit, and blend them up with a cup of berries!

That’s it!  You have yourself a very delicious, nutritious, berry “ice cream” treat!

Ingredients:

  • 2 bananas, sliced and frozen
  • 1 c blackberries

Instructions:

  1. Allow bananas to thaw slightly.
  2. Wash, measure, and add berries to the blender.
  3. Add bananas to the blender.
  4. Blend until smooth.
  5. Eat like ice cream! Mmmm!

Here are some ideas to get your “kid cook” involved with this recipe:

  • Have him wash and measure the berries.
  • Have him add the bananas and berries into the blender and push the buttons.
  • Talk about what ingredients are usually found in ice cream like desserts (milk or cream, sugar, etc.).  Talk about what ingredients are in this ice cream like dessert.  Ask him which he thinks is better for him and why.

This recipe is based on Daniel Tiger’s Banana Swirl recipe, which is just blended frozen bananas.
