After my kid cook helped with the batter, he worked on a giant floor puzzle.

When they came out of the oven, he couldn't wait to eat them.  He insisted on three.  Woah!

Ingredients:

  • 2 c flour
  • 1 t baking soda
  • ¼ t salt
  • 1 t cinnamon
  • ½ c unsweetened applesauce – store bought or homemade
  • ¾ c honey
  • 2 eggs, beaten
  • 3 mashed ripe bananas
  • 1 t vanilla
  • ½ c raisins

Instructions:

  1. Preheat oven to 350° F and lightly grease muffin tin.  You can also use paper liners, but they tend to stick.
  2. Combine flour, baking soda, salt, and cinnamon in a large bowl.
  3. Mix applesauce and honey in a separate bowl.
  4. Stir in eggs, banana and vanilla.
  5. Add banana mixture to flour mixture and stir until just moistened.
  6. Fold in raisins.
  7. Spoon batter into muffin tin and bake 25 minutes or until toothpick comes out clean.

Ideas to get your kid cook involved:

  • He can whisk the dry ingredients together.  Then, stir the wet ingredients together.
  • Ask him which ingredients are fruits.  Talk to him about where all the ingredients come from – raisins are dried grapes, eggs come from chickens, etc.
