Pretty, isn't it?

Pretty, isn’t it?

After our trip to the orchard this weekend, we have a lot of apples to eat.  This is a delicious way to do so!

I debated about whether or not to chop the nuts by hand or use the food processor.  Sometimes I’d rather just take the extra time to do things by hand than clean kitchen appliances.  That’s why I don’t have a stand mixer.  It just seems like a total pain to clean when mixing by hand isn’t so bad.  What are your thoughts on this?

Nevertheless, the kitchen appliance side won the debate today.

I decided to go with the food processor.

I used peanuts and pecans, but any combo of nuts works.

Only four ingredients! (I halved the recipe this time by the way.)

Only four ingredients!
(This time I halved the recipe, by the way.)

  • 8 ounces cream cheese, softened
  • 2 T brown sugar
  • 1 t vanilla
  • 1 c nuts
  • apple slices for dipping

  1. Chop nuts into very small pieces either by hand or using a food processor.
  2. Combine softened cream cheese, brown sugar, vanilla, and nuts.
  3. Dip apples and enjoy!

Ideas to get your “kid cook” involved with this recipe:

  • Have him push the buttons on the food processor.
  • Have him help combine the ingredients.
  • Tell him about Johnny Appleseed, who introduced apple trees to the Midwest in pioneer times.

In other news, we still have some Orchard Applesauce and my kid cook requested a sandwich this afternoon.  A sandwich made out of pumpernickel bread and applesauce.  He happily ate it all but a few bites, which he wanted to save for later.  The soggy mess is currently in my fridge.

Looks, ahem, yummy, huh?
