BBQ Chicken Pizza

This is really easy, really quick, and most importantly, really tasty!

This is really easy, really quick, and most importantly, really tasty!

You can have dinner on the table in about 15 minutes with this one! That’s arguably faster than going through a drive through – with the time it takes to drive out of your way, plus order and pay!

It’s so easy because you can make the chicken ahead of time and use store-bought crust.

What’s that?  You don’t want the hassle of making chicken ahead of time?  Okay, use canned.

It comes with this handy, dandy little sauce packet, which I'll save for a quick pasta lunch since I'm not using it for pizza this time.

Since I’m not using the sauce this time, I’ll save it for a quick pasta lunch or use it as dip for Pizza Roll Ups.

For tonight’s pizza, all you do is mix chicken with BBQ sauce.

Spread it evenly on the crust.

Top it with red onion and feta cheese.

And bake it according to the instructions on the crust package.

Serve it with veggies and dip or salad.

Ingredients:

  • 1 ½ c cooked and shredded chicken
  • up to 1 ½ c BBQ sauce
  • red onion slices
  • 4+ ounces feta cheese
  • 1 large or 3 small store-bought pizza crusts

Instructions:

  1. Preheat oven as directed on pizza crust package.
  2. Mix chicken with BBQ sauce.  Use as much or as little sauce as you’d like!
  3. Spread the BBQ chicken evenly over the pizza crust(s).
  4. Sprinkle red onion slices, then feta on top.
  5. Bake according to pizza crust instructions.

Here are some ideas to get your “kid cook” involved with this recipe:

  • Have him mix the chicken and BBQ sauce.
  • He can help assemble the pizzas.
  • Talk to him about shapes – the shape of the pizza crust, the shape of the pieces once they’re cut, the shapes of the ingredients (onions are spheres; feta cheese block is a rectangle, etc.)
  • Play “I Spy…” for other shapes around the kitchen.
