Something amazing happens to baked strawberries!

I wasn’t planning on making these today, but someone else had different plans.  “I want muffins, Mommy,” he says.  “OK,” I say!  “We have strawberries!”

These are as good as blueberry muffins in my book and are quickly becoming just as popular in our house!  Breakfast might be my favorite thing to cook with my little boy.  As I’ve mentioned before, I love the light in the kitchen in the morning.  Plus there is just something so warm and comforting and cozy about making a yummy breakfast in your jammies with someone you could not love more!

There’s no denying this kid cook is a muffin man!

Ingredients:

  • 1 stick butter
  • 1 ½ c flour
  • 1 ½ t baking powder
  • ¼ t baking soda
  • ¼ t salt
  • 2 ½ t cinnamon
  • ½ c plus 2 T milk
  • 1 egg, beaten
  • 1 c fresh strawberries, chopped into small pieces.
  • ½ c sugar

Instructions:

  1. Preheat oven to 375 and line muffin pan.
  2. Melt butter.
  3. Sift together flour, baking powder, baking soda, salt, and cinnamon.
  4. Make a “well” in the middle of the dry ingredients and pour in the melted butter, milk, and beaten egg.
  5. Mix until just combined.  Don’t overdo it!
  6. Fold in strawberries.
  7. Mix in sugar.  Doing this last makes them a little crunchy!
  8. Bake at 375 for 20-25 minutes.

Here are some ideas to get your “kid cook” involved with this recipe:

  • Have him put liners in the muffin pan.
  • He can unwrap the butter.
  • He can help count the measuring cups/spoons of ingredients.  I often choose smaller cups/spoons so we can count to a higher number.  For example, use ¼ t measuring spoon for the baking powder and count to 6!
  • Have him sift the dry ingredients.  From experience, I’ll tell you that the bigger the bowl, the better! 🙂
