Balsamic Lovers Summer Dinner

This is perfect for late in the summer when there are more cherry tomatoes than you know what to do with!  You can eat them straight off the plant as my kiddo often does or mix them with balsamic vinegar and a little olive oil as in this yummy dish.

Balsamic Lovers Summer Dinner

Balsamic Lovers Summer Dinner

Ingredients:

  • 4-6 chicken breasts
  • 2 bunches asparagus
  • 2 pints grape tomatoes
  • 8 ounces fresh mozzarella
  • 1 c plus 4 T balsamic vinegar
  • ½ c plus 2 T olive oil
  • 1 t garlic powder
  • ½ t+ freshly ground pepper
  • kosher salt

Instructions:

  1. Combine1 c balsamic, ½ c olive oil, garlic powder, and ½ t pepper.
  2. Add raw chicken and marinate 30 minutes-overnight.

  1. Preheat oven to 400.
  2. Wash asparagus and tomatoes.
  3. Trim asparagus and toss with olive oil, salt and pepper on a sheet pan.
  4. Toss tomatoes with 2 T olive oil and 4 T balsamic vinegar in a baking dish.
  5. Roast both asparagus and tomatoes in oven, turning as needed.  The tomatoes will likely take longer depending on how “squishy” you want them.
  6. Grill the chicken and discard the marinade.
  7. Chop mozzarella into bite size chunks.
  8.  Place on plate and drizzle with balsamic from the tomato dish.

Here are some ideas to get your “kid cook” involved with this recipe:

  • Have her help whisk the marinade before adding chicken.
  • She can wash the veggies and trim the asparagus.  You don’t need a knife to trim the asparagus because it will break naturally if you hold it at both ends and bend!
